Easy Apple Cake: My Easy comfort cake

 December is the best month for celebrating, ^^, and it means I have a lot to do. 

I spent my whole day baking a lot of cupcakes and cookies for the party, but I still think about baking something that I really want to eat, haha. As I told you before that cooked apple is one of my favourite kinds of dessert and it included apple cake too. 
It's one of the best comfort food ^^, and it's more comforting when it's very easy to make. Rather than using a pan to cook the apple, you can use only one baking dish (mine is Le Creuset 18x12cm dish). Cook the apple until soften in the microwave is very easy and you don't have to wash a pan too, hehe. Cover the apple for the first part of cooking is to cook them equally, and after removing the plastic wrap, you need to cook to reduce the liquid in the dish so don't skip this step ^^.
This soft cake is the best when served warm with a scoop of vanilla ice cream, but it's very good on its own too.





Easy Apple Cake
Make 18x12cm cake



2 ................................... Apple, peeled and cut into small pieces
15g ................................ Butter (A)
25g ................................ Granulated sugar (A)
1 1/2 tbsp ...................... Calvados (or rum)
105g .............................. Butter (B)*
65g ................................ Granulated sugar (B)
1 .................................... Egg
1 .................................... Egg yolk
....................................... Zest from half of a lemon
75g ................................ Cake flour
1/4tsp ............................ Baking powder
30g ................................ Sultanas (or raisins)
2tbsp ............................. Milk
....................................... Sliced almond

....................................... Vanilla ice cream for serving

*If using unsalted butter add a pinch of salt



 


Preheat the oven to 180C
Sift the flour and baking powder together.


 Put the apple pieces into a baking dish with butter (A).
 Add the granulated sugar (A).
 And the Calvados.
 Cover with plastic wrap, and place in the microwave, heat for 5 minutes (600W).
Remove the plastic wrap and heat again for 3 minutes (600W).


 Put the butter (B), into a bowl, beat until soften.
Add the sugar (B) and beat to combine.
Add the lemon zest and beat to combine.
 Put the egg and egg yolks into the bowl, and beat to combine.


 Add the flour mixture with the raisins, and fold to combine.


 Put the milk into the bowl.


 Fold to combine.
Put into the baking dish, level the top and sprinkle the sliced almond over the cake.
Bake for 25 minutes.
Serve warm with vanilla ice cream.
