Cauliflower, pasta and cheese bake

Easy one dish meal is great ^^, esp. when I can't find enough space, haha.
I think macaroni and cheese is one of the most comfort food in the world, creamy white sauce with soft pasta, nothing can be better. But for this time we add goodness into this comfort dish. By pureeing the cauliflower, it adds creaminess without a lot of calories. When eating, cooked cauliflower cut down the richness into right amount (and if you talk about health, it provides you more fiber too). 
Because I don't have Macaroni at hand, (well, I can't find it and don't want to go out to buy it), I use spaghetti instead, actually you can use any kinds of pasta too. 
I love the creaminess of this dish, but I found out that it goes very, very well with spicy Sriracha sauce, and I ended up eating it with Sriracha sauce ^^ instead of adding more salt and pepper. 

Cauliflower pasta and cheese bake
Serve 4


300g ............................... Cauliflower, cut into floret 
200g ............................... Pasta
550ml ............................. Milk
45g .................................. Butter
45g .................................. Plain flour
70g .................................. Whipping cream (you will need more or less depend on how creamy you want)
150g ................................ Mozzarella cheese, grated 
......................................... Salt and pepper, to taste


Put the Cauliflower into the saucepan with milk, place over medium heat, let the mixture boil then simmering until the Cauliflower are tender (about 10 minutes).

Drain the cauliflower and keep the hot milk aside.
Puree half of the cauliflower with a dash of salt, and keep the rest.

Preheat oven to 230°C. 
Put the butter into saucepan, place over low heat, when the butter melt, pour the flour into the pan and whisk to combine. Pour the hot milk into the 
Pour hot milk into the pan whisk to combine, then add the cauliflower puree, increase the heat to medium, let the mixture boil until thicken, whisk constantly.
Cook the pasta depends on the package instruction.


When the white sauce is ready, mix white sauce, cook pasta, reserved cooked cauliflower together and 25g of Mozzarella cheese, season with salt and pepper. Add whipping cream if the mixture is dry or if you want it to be creamy ^^.
Divide the pasta into 4 dishes and sprinkle the Mozzarella cheese on top.
Bake for 15 minutes or until the top is bubble and become brown.
Serve immediately.
Ps. If you love spicy taste, this one is great with Sriracha sauce ^^.
