White chocolate, cranberry cookies: To keep and to give

Cookie is one of the easiest baking product ^^, plus there are endless flavors.

 For soft cookie, it means adding something that you like into the dough, any kinds of chocolate, dried fruits or spices, it's up to you.
I love baking cookies, it can be done in less than hour, hehe, and I get a full box of delicious treats. This one is the combination of white chocolate, cranberry and a bit of cinnamon, the sweetness of white chocolate get along very well with slightly tart dried cranberry and cinnamon make the fragrance of this cookie more special. If you like you can add some nut into the dough too, I think pecan will be great ^^.
Give them as gifts or keep them all for yourself, you will be happy both way.

White chocolate, cranberry cookies
Makes 16 pieces


135g ............................... Unsalted butter
1/2tsp ............................ Salt
75g ................................. Light brown sugar
80g ................................. Brown sugar
1 ...................................... Egg
1/2tsp ............................ Vanilla extract
190g ............................... All purpose flour
1/4tsp ............................ Ground cinnamon
1/2tsp ............................ Baking soda
100g ............................... Dried cranberries
60g ................................. White chocolate, chopped
* If you want to add nut, use only 50g of dried cranberries and add 50g of nuts.

Preheat the oven to 170°C
Sift the flour, cinnamon, and baking soda together, set aside.
Line 2  sheet pans with baking paper. 



 Beat the butter with salt and both of the sugar until lighten in color, add the egg, vanilla extract and beat until combine.
Fold in flour mixture, dried cranberries and chopped white chocolate.
Scoop the dough onto the sheet pans.
Bake for 13-15 minutes or until golden brown.

  1. Biscuits they are extremely delicious. I baked one dose sticks so they quickly disappeared. Thanks for the recipe.
