Rich Chocolate and Macadamia nut Cake: Gooey delicious chocolate cake!

Sometime I dream about chocolate, I know that it's weird, but I have to admit it ^^. Chocolate is my weak point too, well who can resist it, esp. when it's so rich in chocolate taste too.

 I found the recipe in ......................, the book that after reading the title, I needed it, haha. Because caramel and chocolate are used a lot in my baking, if you ever notice ^^. Mostly the caramel is for my sister and chocolate is for me, so with this book, we're both happy, hehe. 
Today I choose to make the cake for myself, and when I said that you should know that it's chocolate cake. This cake is very rich in chocolate taste, it contains a lot of chocolate, and I mean a lot, haha, for this small recipe. The cake is a kind of fallen chocolate cake, it contains no flour (but have only a bit of cocoa powder). It will sink a bit (or much depend on the folding, heating or resting ), ^^, so you don't have to be worried at all, haha. 
I bake it for 30 minutes and the cake still very soft and gooey inside, you can bake longer to get drier cake, but for me this is the one that I want.
Serve this delicious cake with vanilla ice cream on a lazy afternoon, and you will have a good afternoon sweet dream (like me ^^).





Rich Chocolate and Macadamia nut Cake
Makes 2 (12cm cake)


120g ............................... Dark chocolate (50%)
75g .................................. Butter
20g ................................. Cocoa powder
60g ................................. Granulated sugar
2 ...................................... Eggs
100g ............................... Macadamia nuts (roasted)
......................................... Vanilla ice cream, for serving

Preheat the oven to 160°C.
Line 2 (12cm cake pans) with non-stick baking paper.


 Melt the chocolate and butter in a bowl, using the microwave, heat for 30 seconds and stir, repeat until all the chocolate melt, sift the cocoa powder into the chocolate bowl, stir to combine.
Whip eggs in a medium bowl until foamy, adding the granulated sugar slowly, whip until ribbon stage.
Fold about 1 cup of egg mixture into the chocolate bowl.
  Pour the mixture back into the egg bowl, add the nuts,  fold to combine. 
Pour the batter into the prepared pans, bake for 30 minutes (or if you want it to be firmer you can bake for 40 minutes).
Let cake cool in the pan for 20-30 minutes, cut and serve with delicious vanilla ice cream, yummy yummy!!!
