Caramelized Onion Quiche: Delicious breakfast quiche

Baking is my No.1 cooking method, ^^ well, I feel good to be next to my oven. I think it's easy to do it to, because after preparing the oven will do the rest of the job.

For this time I choose Caramelized Onion Quiche, anyway the first impression from my brother when I said that I made the caramelized onion is "I don't think it'll be delicious, why don't you add some ham ?". Well, he loves to eat protein. But I know that this quiche will be great, the caramelized onion is very flavorful, and when mix it with cheese and egg, you won't need anything more. And I was right, ^^ the moment that I served him this quiche, he told me that he couldn't believe it tastes so good!!!
You may think that serving something baked in the morning will be hard to do, but it's easier than you ever imagine. There are many kind of morning treats that can be made by the oven, and most of them allow you to prepare ahead. Like this lovely Caramelized Onion Quiche, you can bake the pie crust and mix the filling on the night before and put them together in the morning let the oven do its job. So you will have a great breakfast, a lot of time to do your make-up, do something else or go bake to sleep a bit longer, haha.





Caramelized Onion Quiche
Makes 9 inches quiche
Pie crust 
175g ............................... All purpose flour
½tsp ................................ Salt
115g ............................... Cold butter, diced
¼cup ............................ Cold water
Filling
2tbsp ............................... Extra virgin olive oil

2½cup ............................ Thinly slice onions
¾ cup ............................. Whipping cream
¾ cup ............................. Milk
3 ...................................... Large eggs
½ tsp .............................. Salt
¼ tsp .............................. Freshly ground black pepper
1¼ cup ........................... Gruyère cheese 

 Put flour and salt in a food processor, process to combine. Add the butter process until the mixture looks like coarse meal.
Drizzle a few tablespoon of water and process (briefly), adding more water until the dough will come together, take out of the bowl and press into a ball. Cover with a plastic warp and refrigerate for 20 minutes.


Preheat the oven to 200 °C
 Roll the dough, cut into desired size and line the pan with the dough.
Prick the dough with table fork (or bamboo stick).
 Line the dough with aluminium foil and fill with pie weights.
Bake until the crust is set and dry 12-15 minutes.
Remove the pan from the oven and remove aluminium foil and pie weights.
Return the crust to the oven and bake until the crust is completely dry and light golden brown, another 5-6 minutes. Let cool to room temperature before adding a filling.


Make the filling:
 Preheat the oven to 180 °C
Heat the olive oil in a saute pan over medium heat. Add the onion and saute, stirring frequently, until golden and very soft (caramelized), about 15 minutes. Remove the onions from the pan with a slotted spoon and reserve.
Whisk together the whipping cream, milk, eggs, salt and pepper in a medium bowl. Stir the reserved caramelized onions and 1 cup of the cheese into the egg mixture. Pour the egg mixture evenly into the pie crust. Sprinkle the remaining cheese evenly over the top of the quiche.
Set the quiche pan on a baking sheet and bake until a knife blade inserted in the center comes out clean, 40-45 minutes. If the pie crust begins to overbrown, cover edges of the pie crust with strip of aluminium foil or pie shields. Remove the quiche from the oven and cool on a wire rack. Let the quiche rest at least 20 minutes before cutting in pieces.
Serve hot, warm or at room temperature.

    What is Gruyère cheese? Can I substitute it with something else?

  3. It's a kind of Swiss cheese with good melting quality and mild taste. If you can't find it use Emmental cheese instead.
